- Menor Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): Burrito prep refrigerator: white cheddar cheese grated at 6:30 a.m. today observed at 45 degrees F and diced tomatoes observed at 44 degrees F (prepped on Friday.) Gluten free maketable refrigerator: sliced tomatoes (prepped yesterday): 45 degrees F, tofu: 43 degrees F. Pizza prep refrigerator: vegan patties (4): 51 degrees F. Grilled onions on griddle: 98 - 102 degrees F. Grilled onions (~ 1/2 cup) and vegan patties voluntarily discarded. Maintain potentially hazardous foods at 41 degrees f or 135 degrees F or hotter.
