Grilled onions on griddle: 98 - 102 degrees F. Grilled onions (~ 1/2 cup) and vegan patties voluntarily discarded. Maintain potentially hazardous foods at 41 degrees f or 135 degrees F or hotter.

Brown rice in rethermalizer observed at 123 degrees F. 3 lbs of rice voluntarily discarded into the compost container. Brown rice observed at 123 - 135 degree F in burrito section hot holding unit. ~ 1 cup of brown rice discarded. Burrito prep refrigerator; grated cheddar cheese grated at 8 a.m. today: 46 degrees F, and diced tomatoes diced on 12/22/24 observed at 32 degrees F. prepackaged burrito in bottom of prep refrigerator had internal temperature of 46 degrees F. Vegan cheddar cheese in prep refrigerator: 46 degrees F. Gluten free maketable refrigerator: sliced tomatoes sliced at 10:30 a.m. observed at 46 degrees F. 2nd batch of grilled onions being hot held observed at 120 degrees F. ~ 1.5 cups grilled onions voluntarily discarded. Pizza prep refrigerator: grated mozzarella: 43 degrees F. Observed open container of milk on the counter at 53 degrees F: ~ 1cup of milk voluntarily discarded. maintain potentially hazardous foods at or below 41 degrees F or at or above 135 degrees F.
