    Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
    Redacción oficial (en inglés): Multiple potentially hazardous foods (PHFs) observed/measured and holding at improper temperatures. Tri tip and chicken in warming/hot holding unit measured at 120F. Gravy measured at 90F in hot hold unit. Per manager, PHFs were prepared less than 30 minutes prior. Items sent to rapidly re-heat to 165F during visit. All PHFs shall be maintained at 135F or above or 41F or below.
