Multiple potentially hazardous foods (PHFs) observed/measured and holding at improper temperatures. Tri tip and chicken in warming/hot holding unit measured at 120F. Gravy measured at 90F in hot hold unit. Per manager, PHFs were prepared less than 30 minutes prior. Items sent to rapidly re-heat to 165F during visit. All PHFs shall be maintained at 135F or above or 41F or below.
