    Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
    Redacción oficial (en inglés): Observed 8 containers of milk in one door Kelvinator refrigerator with internal temperature of 50 - 51 degrees F. other whole milk containers of 46 - 48 degrees F with infrared thermometer, also in this refrigerator. Maintain unopened containers of milk at or below 45 degrees F and maintain open containers of milk at or below 41 degrees F. All 8 milk containers at 50 degrees f and above were voluntarily discarded down the drain.

    Redacción oficial (en inglés): Observed frozen burritos in plastic wrap in Spartan freezer without labels. Per owner, these burritos are made at a restaurant in San Francisco - Belle Trattoria, 3854 Geary Blvd.. Obtain a commissary agreement signed by the restaurant owner and the San Francisco Health Department and submit a copy. Observed unidentified food in plastic warp in the same freezer with burritos. Food handler thinks it is turkey and said it isn't sold. Provide invoice for this unidentified food. Discontinue selling burritos until given approval by Marin County Environmental Health Services. Remove burritos and unidentified food from this facility.. Okay to take these home, per C.P. Supervisor, Shannon Bell.

    El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.
