Observed dark brown and black material on two white ramekins on shelf. Wash, rinse, and sanitize dishwasher before storing with clean dishware.

Employee stated chicken was prepared about an hour ago. / Lay chicken out onto baking sheet to rapidly cool from 135-70°F in 2 hours then place into refrigeration uncovered and spread out to cool from 70-41°F in 4 hours thereafter.
