Observed chicken stacked on top of each other in a deep pan in a refrigerator. Chicken recorded at 107°F. Employee stated chicken was prepared about an hour ago. / Lay chicken out onto baking sheet to rapidly cool from 135-70°F in 2 hours then place into refrigeration uncovered and spread out to cool from 70-41°F in 4 hours thereafter.
