Flour: 53 degrees F. Thermometer in unit: 47 degrees F. Mounted exterior thermometer: 38 degrees F. Technician checked refrigerator. Temperatures were fluctuating. Unknown when unit will be repaired. Don't store any potentially hazardous foods in this unit until it it is capable of holding p.h.f 41 degrees F or colder. Place water in insert pan and send video showing water 41 degrees F or colder.

    Redacción oficial (en inglés): Hot holding case right of deep fryer had chicken in deep containers recording at 105°F. Chicken is seared, placed in oven to cook, cut then placed in containers to hot hold. / Change practice to reheat chicken to 165°F after cutting then hot hold at 135°F or above. Discard out of temperature chicken.
