Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): *MAJOR On the bottom outer section of the open display case, California Roll sushi measured at 52F. *MINOR On the bottom outer section of the open display case, CA Crunch Roll measured at 44F. Sushi rolls taken from the walk in cooler to the open display case approximately 2.5 hours prior to measurement. Ambient temperature on the bottom outer section of unit measured between 42F - 43F. [CA]: Potentially Hazardous Food shall be cold held at 41F or below at all times. [SA]: Sushi rolls on the bottom outer section of the unit were relocated to cool down. - Menor Problemas con equipos o utensilios
