Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): In the right-side milk cooler at the back of the kitchen area, numerous burritos measured between 48F and 49F. Ambient of the bottom of the unit measured 38F via probe. Staff provided receiving logs, which noted that burritos had been delivered approximately 3.5 hours prior at 40F. Per staff, the frequent opening and closing of the milk cooler may be resulting in the elevated temperature of the burritos.
[CA] Potentially hazardous foods shall be held at 41F or below, or at 135F or above to prevent the growth of bacteria.
[COS] Instructed staff to relocate burritos to an alternate refrigeration unit.

Nota del inspector (en inglés): 1. Observed Vermin:
- Live and dead cockroaches observed on sticky monitoring traps. One on floor behind the milk refrigerator inside the kitchen. The second one located on floor behind the chest freezer at the roll-up door at the service line in the kitchen.
- Staff stated that facility is serviced every two weeks. Pest control reports were unavailable for review.
- No contamination of food or food contact services observed. No other activity was observed.

[CA]: The premises of each food facility must be maintained free of vermin. A facility cannot operate if there is a vermin infestation that leads to contamination of food contact surfaces, packaging, utensils, food equipment, or adulteration of food. The facility is required to cease operations immediately and must remain closed until all corrective actions on the provided checklist are completed.
[COS] Traps with cockroach activity was discarded.
