    Nota del inspector (en inglés): Inside the walk-in refrigerator: measured internal temperature of sliced cheese and juice to be 44F. Ambient temperature measured approximately 45F. Operators stated that there was a lunch rush starting around 12 or 1pm today (approximately 2.5 hours prior); due to a new menu item requiring employees to constantly enter the walk-in freezer (which requires walking through the walk-in refrigerator), the door was opening constantly. [CA] Keep potentially hazardous foods at 41F and below or 135F and above. Note: a metal probe thermometer measured the walk-in refrigerator's ambient temperature to be 41F after it was left inside with the door closed for 20 minutes. Carefully monitor food and ambient temperatures inside the walk-in refrigerator.
