Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

[CA] Ensure potentially hazardous foods are held cold at 41F and below to prevent bacterial growth. [COS] Operator moved orange juice and various Naked juices to nearby refrigeration to facilitate proper holding temperatures. - Menor Problemas con equipos o utensilios

[CA] Ensure refrigeration used to store potentially hazardous foods is fully functioning and able to maintain temperatures at 41F and below. All refrigeration shall be properly maintained and in good repair.
