Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

Nota del inspector (en inglés): Observed employee to be washing the trashcans and dump the waste water in the the small circular floor drain (not the floor sink). The wastewater was all over the floor in the warewashing part of the kitchen. Employee mopped the waste water up and sanitized the floors. [CA] Discontinue washing trashcans in this manner that results in wastewater all over the kitchen floor. Dump wastewater in suitable receptacle such as the mop sink.
