Redacción oficial (en inglés): Proper hot and cold holding temperatures

Nota del inspector (en inglés): Shell eggs in the kitchen prep unit measured 50F. Eggs were found to be stored in double stacked containers at the top portion of the prep unit. [corrective action] Maintain potentially hazardous foods at 41F or below. [correction] Eggs were stored in a single container. Note: Chef noted that eggs and some other items were stored in double stacked containers to prevent food from freezing. Ambient temperature of this unit measured 31F. Recommend adjusting the ambient temperature slightly higher to prevent food from freezing, as long as food can be maintained at 41F or below.
