Nota del inspector (en inglés): Noted strong odor of smoke in the kitchen. Upon investigation, observed that the oven was in-use to reheat foods, but the ventilation hood had not be turned on. Per Michelle, she had had a meeting earlier today and forgotten to turn the hood on.
[CA] Provide approved exhaust hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors.

Two dead, partially decomposed rodents observed on a sticky trap on the floor in the corner of the dry storage room.

Per staff, facilities handles pest control (via sticky traps) in the interior of the kitchen, and Advanced IPM performs regular pest control treatments around the exterior of the building.
*Note: Facility has a past history of rodent activity.
Consulted with J. Zertuche and J. Rubingh regarding vermin findings.
[CA]: The premises of each food facility must be maintained free of vermin. A facility cannot operate if there is a vermin infestation that leads to contamination of food contact surfaces, packaging, utensils, food equipment, or adulteration of food.
Keep doors closed where possible to prevent the intrusion of vermin. Seal any gaps, holes, cracks, or crevices in or around the kitchen area that may allow for the entrance or harborage of vermin.
The facility may remain open under the condition that:
The facility may not assemble/repackage food, or portion or handle open foods until approval is obtained from this department during the follow-up inspection.
A follow-up inspection will be conducted within 48 hours to ensure that the facility is free of rodent activity.

Nota del inspector (en inglés): Multiple rodent droppings observed on/around the water heater. Per the PIC, they caught a couple mice one or two years back, but have had no issues since. PIC states that the school receives a regular pest control service.

[SA] Rodent droppings to be cleaned up. Pest control to actively monitor/service where needed. - Menor Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Chicken salad measured 46F-49F in the 2-door upright cooler in the kitchen area. Ambient of the unit measured between 43F-46F. Per the PIC, unit ambient had read 41F less than 1.5 hours prior.
[CA] Potentially hazardous foods (PHFs) shall be held at or below 41F to prevent the growth of bacteria. Refrigeration must be capable of maintaining PHFs at or below 41F.
[SA] Chicken salad to be served or discarded by the end of the lunch period (less than 4 total cumulative hours out of temperature control). Refrigerator technician scheduled.
