Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Observed PHFs to measure in the temperature danger zone located in the display case cooler (See measured observations). Per staff, the food was made this morning and the sliding door may have been left open slightly [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. [SA] PIC will have staff monitor PHFs to ensure the temperature drops; PIC put a request in to have the unit adjusted colder.
