- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): 2-102.11 - Demonstration: I asked the kitchen manager what temperature she cooked the chicken at, and her response was 150°F. Then she said chicken is supposed to be cooked at 155°F, but she cooked it to 167°F. The person in charge shall demonstrate this knowledge by stating the required food temperatures and times for safe cooking, including time/temperature control for food safety, for meat, poultry, eggs, and fish. Talked to the kitchen manager about learning the proper cooking temperatures.
