Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Observed raw beef patties being stored inside the reach-in cooling unit above ready-to-eat foods such as sauces and fresh produce. Food shall be protected from cross-contamination by separating raw animal foods from ready-to-eat foods by separating during storage. Talked to the kitchen manager. She stated that the delivery person placed the raw beef patties in the reach-in cooling unit. We will talk to Yuri to ensure delivery staff know to never place raw animal foods above ready-to-eat foods.
