- Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Cream cheese spread (71F) and dairy butter (74F) were observed being kept out at room temperature on the counter top in the dining area at the time of inspection. These products are dairy based and the cream cheese spread has instructions on container to refrigerate after opening. Butters were observed stored in the Walk In Cooler. Discussed placing a small amount of products out during breakfast service and using it under a Time as a Public Health Control (TPHC) Plan. Provided plan with emailed report. Maintain all cold TCS foods at 41F or lower at all times for safety or use under Time as a Public Health Control Plan.
