- Menor Problemas de origen, fechas o etiquetas de los alimentos
Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.
Redacción oficial (en inglés): Label all food packages as required by the law.
Nota del inspector (en inglés): Observed several food items being packaged on-site without labels, including packaged fish, bread, nuts, and candy. A conversation was had with the Person In Charge regarding the need to label all food items being repackaged on-site. All repackaged food items must have the following: business name, business address, product name, complete ingredient list, and net weight. - Crítica Alimentos no protegidos contra la contaminación
Los alimentos se guardaban o manipulaban de una forma que podía permitir que les llegaran gérmenes u otros materiales, como carne cruda guardada encima de comida lista para comer o alimentos sin cubrir. La contaminación cruzada es una causa común de enfermedades transmitidas por alimentos.

Nota del inspector (en inglés): Observed eggs in display cooler stored on top of vegetables. Person In Charge was asked to move the eggs away from vegetables. Discontinue placing eggs on top of ready-to-eat food. - Crítica Problemas de limpieza o desinfección
Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.
Redacción oficial (en inglés): Discard shell eggs that are not clean and sound, or exceed the restricted egg tolerances.
Nota del inspector (en inglés): 1. Observe goose eggs being sold on-site. Person In Charge was unable to provide receipt for purchase of goose eggs. 2. Observed no placard posted for the goose eggs. Provide the following information: product identity, grade and size, name and address of producer, pack date, quality assurance date, and the statement "Perishable. Keep Refrigerated". Discontinue the purchase and selling of goose eggs as PIC was unable to provide purchase history.
