Nota del inspector (en inglés): There is not a Minnesota Certified Food Protection Manager (CFPM). A partner not involved in daily operations has a ServSafe class certificate that was not submitted to Minnesota Department of Health (MDH). However, someone involved in the daily operations and training of staff must obtain the Minnesota CFPM certificate. The process is to take an approved class (such as ServSafe), then to apply online with MDH. • Crítica Problemas con el lavado de manos

Redacción oficial (en inglés): Make sure all ready-to-eat foods and garnishes are not touched with bare hands.

Nota del inspector (en inglés): Employee observed handling a ciabatta roll with bare hands during sandwich preparation. Discussed with Person in Charge that this is not allowed. Roll was discarded and a new order started with washed, gloved hands. Train employees to use utensils, gloves (put on washed hands) or other effective methods to prevent bare hand contact with all ready to eat foods.
  • Importante Problemas de origen, fechas o etiquetas de los alimentos
