There is not a Minnesota Certified Food Protection Manager (CFPM). A partner not involved in daily operations has a ServSafe class certificate that was not submitted to Minnesota Department of Health (MDH). However, someone involved in the daily operations and training of staff must obtain the Minnesota CFPM certificate. The process is to take an approved class (such as ServSafe), then to apply online with MDH. Employee observed handling a ciabatta roll with bare hands during sandwich preparation. Discussed with Person in Charge that this is not allowed. Roll was discarded and a new order started with washed, gloved hands. Train employees to use utensils, gloves (put on washed hands) or other effective methods to prevent bare hand contact with all ready to eat foods.

Portions of Horchata and chicken salad were not datemarked. These are ready to eat, TCS foods which must be datemarked to ensure they are not kept in use more than 7 days. Provide datemarks on all such prepared foods.

Several food items are being procured from other retail food businesses: Flan and other dessert items from a bakery north of Minneapolis - possibly Panaderia La Espiga, Spring Lake Park. Flat bread - possibly from Ajeen Bakery, Eagan. Other items not identified at time of inspection. Unless these food businesses have a Distributor or Wholesale license, they are not approved sources. Provide proof of proper licensing from these businesses (copy of their licenses) or discontinue purchasing their products immediately.
