Redacción oficial (en inglés): The person in charge must notify the regulatory authority of any complaint from a consumer having or suspected of having diarrhea or vomiting, norovirus, hepatitis A virus, Salmonella spp., Shigella spp., Shiga toxin-producing Escherichia coli, or other enteric bacterial, viral, or parasitic pathogens.

Nota del inspector (en inglés): Based on discussion with GM and DM, no clear procedure was in place to report a customer complaint of illness to the Minnesota Department of Health, as required. An effective procedure must be put in place to call 1-877-FOOD-ILL, or report online at: https://www.health.state.mn.us/diseases/foodborne/reporting.html
Redacción oficial (en inglés): The business must employ at least one valid Minnesota Food Protection Manager's certification (CFPM). Find more information on the Minnesota Department of Health web page.

Nota del inspector (en inglés): GM has recently passed the required exam and will be applying for Minnesota CFPM. See https://www.health.state.mn.us/communities/environment/food/cfpm/howto.html
Redacción oficial (en inglés): Have an item to verify the surface temperature of dishes reaches 160 degrees F inside mechanical hot water dishwashers.

Nota del inspector (en inglés): No temperature stickers/strips or immersible dish thermometer was available to test the rack temperature of the dishwasher during hot water sanitizing. GM is ordering temperature stickers/strips.
Redacción oficial (en inglés): Keep a log to record employee illness symptoms. Have it available upon request.

Nota del inspector (en inglés): No employee illness log was available. GM printed a log for use recording when employees stay out with vomiting or diarrhea.

Nota del inspector (en inglés): Store manager did not know that any customer complaint of illness involving diarrhea or vomiting must be reported to the Minnesota Department of Health Foodborne Illness Hotline at 877-FOOD-ILL, health.foodill@state.mn.us , or https://www.health.state.mn.us/diseases/foodborne/reporting.html . Store manager stated he would inform Customer Contact Center and District Manager, but upon contact, neither were able to indicate that they would report such a customer complaint to MDH. Ensure every report of customer illness is reported, regardless of what the Customer Contact Center specialists determine.
