Establishment has mop hangers. Please make sure employees are using and hanging mops to allow mop head to air dry. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).

The lettuce is in the top of a flip top cooler that is opened frequently and in a plastic pan (not metal). Quickly cool TCS foods that are prepared from room temperature ingredients. Food must be to 41F within 4 hours. CDI- The PIC had 30 mins left to cool the lettuce (first cut at 12pm) and was instructed to place in the reach in freezer to cool to 41F. Lettuce cooled to 40F.

Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. CDI- PIC was able to confirm times pizzas were made and immediately marked them on time holding sheet.
