Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.

Nota del inspector (en inglés): 3-501.18; Priority; In the walk-in cooler; opened containers of chili and pulled pork were lacking a date label. In the reach-in cooler; opened container of hot dogs was lacking a date label. In the prep cooler; portioned container of sausage in Ziploc bag had the freeze date but was lacking the thaw date. Chili and pulled pork were opened on Sunday and package of hot hot dogs was opened on Friday. Time/Temperature Control for Safety (TCS) food shall be discarded if it is in a container or package that does not bear a date or day and once it exceeds its date for time/temperature safety (7 days from preparation or opening if held at 41F or below). *When TCS food is portioned and placed in the freezer to hold; it requires a date mark label containing freeze date and thaw date to track the 7 day hold. - Hallazgo Problemas con equipos o utensilios
Los equipos, utensilios, termómetros, tablas de cortar o artículos desechables no estaban en buenas condiciones, no eran del tipo adecuado o no se guardaban correctamente.

Nota del inspector (en inglés): 4-903.11(A); (B) and (D); Core; Two ice buckets being stored inverted in direct contact with the top of the ice machine. Clean equipment and utensils shall be stored in a clean; dry location; where they are not exposed to splash; dust; or other contamination. Place sheet pans or another barrier to prevent ice buckets from contacting an unclean surface.
