3-501.18; Priority; In the walk-in cooler; opened containers of chili and pulled pork were lacking a date label. In the reach-in cooler; opened container of hot dogs was lacking a date label. In the prep cooler; portioned container of sausage in Ziploc bag had the freeze date but was lacking the thaw date. Chili and pulled pork were opened on Sunday and package of hot hot dogs was opened on Friday. Time/Temperature Control for Safety (TCS) food shall be discarded if it is in a container or package that does not bear a date or day and once it exceeds its date for time/temperature safety (7 days from preparation or opening if held at 41F or below). *When TCS food is portioned and placed in the freezer to hold; it requires a date mark label containing freeze date and thaw date to track the 7 day hold.
