If the mobile food unit wishes to leave these doors open then they shall install adequate control measures to prevent entry of insects before the next inspection.

    Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

    Nota del inspector (en inglés): 3-501.16(A)(1); Priority; Pans of cooked onions and bell peppers on the stove were holding below 135F; see temperature table. TCS (time/temp control for safety) foods in hot-holding shall be maintained at 135F or above; unless time is used as the public health control. CDI - Discussed procedures with PIC and agreed to use time holding on the cooked onions and peppers in the future. PIC wrote down time peppers and onions were cooked and REHS emailed TPHC outline to PIC.
