TCS (time/temp control for safety) foods in hot-holding shall be maintained at 135F or above; unless time is used as the public health control. CDI - Discussed procedures with PIC and agreed to use time holding on the cooked onions and peppers in the future. PIC wrote down time peppers and onions were cooked and REHS emailed TPHC outline to PIC.
