    Nota del inspector (en inglés): 4-501.114 Quat sanitizer in basin of three compartment sink with items in it less than 200 ppm and bottle states it should be 200 ppm. Maintain sanitizer at correct concentrations when being used to sanitize. -P More tablets added to solution to create a 200 ppm solution. CDI 4-602.12 Soda nozzles had brown residue in them and pink residue on bottom of ice chute. Dispensing equipment shall be cleaned as often as necessary to preclude the accumulation of soil or mold. Swiss in front prep table 42-43F and an opening where a pan belongs can be contributing to air loss; ambient air of this unit 37F and pepperoni in this unit standing up where bottom at 41F and top of product at 45F. Tuna salad in display case since yesterday and at 42-43F; other products placed in it this morning from walkin. Display case ambient air at 42F. Tomato in togo makeline stacked high and 40F at bottom and 45F at top; lettuce cut today 42-48F. Maintain TCS foods in cold holding at 41F or less. -P Cheese in grill prep table relocated to cool from top of stack. Lid added to front prep table to stop air escaping and pepperoni relocated to cool and was only in unit for this morning. Temperature setting of display case decreased during inspection and the air reached 41F during inspection. Top portion of tomatoes from togo makeline relocated to cool and lettuce relocated to cool; items must cool after prep prior to being placed on makeline. CDI

    Nota del inspector (en inglés): 3-307.11 Miscellaneous Sources of Contamination (C) Water dripping from mechanical portion of walkin in the ceiling it dripping heavily onto the heads of lettuce. A slotted plastic container was inverted on top of the container of lettuce but still allowing water to come in contact with the food. Provolone cheese not in packaging was in display case laying in direct contact with the outside of another package. Food shall be protected from sources of contamination. Heads of uncut lettuce brought to vegetable prep sink to be pruned and rinsed; placed into a new clean container and placed in to a different area in the walkin. No food to be stored in the dripping water. Provolone relocated. CDI
