Nota del inspector (en inglés): 3-501.17 Ready-To-Eat Time / Temperature Control for Safety (TCS) Food; Date Marking (Pf) Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf the date the TCS food prepared or unpacked count as day 1 and consumed within 7 days. 3-501.18 Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. -P - Observed pizza sauce unpacked and stored on the prep cooler line since yesterday with no date mark. CDI - the pizza sauce date marked. - Observed sausage topping; sliced tomato and spinach prep/unpacked longer than 7 days. CDI - the tomato and spinach were removed from the public service. - Observed whipped cream open and stored longer than 24 hours with no date mark. CDI - the whipped cream discarded. (A) In a mechanically refrigerated or hot FOOD storage unit; the sensor of a TEMPERATURE MEASURING DEVICE shall be located to measure the air temperature or a simulated product temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot FOOD storage unit. - Observed that all the prep cooler units that store TCS food have the ambient air thermometer located on the back side of the unit.
