Utensils including metal food containers and bowls had wet food residue present on clean dish rack in warewashing area. These items were being stored as clean. Equipment food-contact surfaces and utensils shall be clean to sight and touch. CDI- All soiled items were taken to the warewashing area to be cleaned and sanitized. 4-501.114; Priority; Sanitizer concentration in main dish machine tested at 0ppm chlorine. It was determined that the bulk concentrate was empty and there was no chemical in the line. Chlorine sanitizer shall maintain a concentration between 50-200ppm chlorine. CDI- Chemical was switched out and machine was primed. Machine is now dispensing at a concentration within acceptable range.

Several cartons of raw eggs found stored above ready-to-eat food in the walk-in cooler. Raw T-bone steak stored on shelf above ready-to-eat plantains in the prep cooler. Food shall be stored to prevent cross contamination. Store food according to final cook temperature. CDI- All foods were rearranged during the inspection.

    Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; All TCS food in the walk-in cooler were holding above 41F (see the temperature chart). Ambient air of walk-in cooler measured 50F. Maintain TCS foods in cold holding at 41F or less. CDI- Refrigeration technician was called for an emergency visit and arrived during the inspection to conduct necessary repairs. All ready-to-eat; TCS foods in the walk-in cooler were voluntarily discarded. Use thermometer to check internal food temperatures throughout the day. Monitor ambient temperatures of refrigeration units regularly.

If an animal food such as beef; eggs; fish; lamb; milk; pork; poultry; or shellfish is served or sold raw; undercooked; or without otherwise being processed to eliminate pathogens; either in ready-to-eat form or as an ingredient in another ready-to-eat food; the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder. VR- EHS will return by January 8; 2026 to verify that the menu has been corrected.

Reduced oxygen packaged fish indicating that it shall be kept frozen shall be removed from the reduced oxygen environment prior to thawing under refrigeration. Remove fish from packaging or cut packages open to introduce air prior to thawing.

A few stacks of to-go containers being stored on the makeline out of original packaging with food-contact side exposed to contamination. Single-service and single-use articles shall be stored in a clean; dry location; where they are not exposed to splash; dust; or other contamination; and at least 6 inches above the floor. Single-service and single-use articles shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. Keep these items off of the floor and Invert containers or keep in the original packaging.
