4-601.11 (A); Priority Foundation; Knives on magnetic strip had food residue present. Utensils including metal food containers and bowls had wet food residue present on clean dish rack in warewashing area. These items were being stored as clean. Equipment food-contact surfaces and utensils shall be clean to sight and touch. CDI- All soiled items were taken to the warewashing area to be cleaned and sanitized. 4-501.114; Priority; Sanitizer concentration in main dish machine tested at 0ppm chlorine. It was determined that the bulk concentrate was empty and there was no chemical in the line. Chlorine sanitizer shall maintain a concentration between 50-200ppm chlorine. CDI- Chemical was switched out and machine was primed. Machine is now dispensing at a concentration within acceptable range.
