Faltaba o estaba vencido un permiso obligatorio, un certificado de seguridad alimentaria, un gerente capacitado o un aviso que debe estar a la vista. Estos demuestran que el negocio cumple las reglas y tiene personal capacitado.

Nota del inspector (en inglés): 3-501.17; Priority Foundation - Mushrooms from sealed container; sausage topping had no dates (PIC stated they have been opened yesterday). Open bag of cut lettuce had no date (opened a few days ago). Refrigerated ready-to-eat (RTE) TCS* foods shall have dates (date opened; use by date or both dates). CDI by placing dates on foods. 3-501.18; Priority - Portioned cooked shredded pork had dates of 8/23 and 9/12--more than 7 days ago. Working containers of sanitizers; chemicals; etc. shall be labeled with the names of their contents. CDI by labeling spray bottle. 7-201.11; Priority - Spray bottles of stainless steel cleaner were intermingled with food items and located near disposable food containers. One sanitizer bottle was located near/above boxes of disposable gloves. Chemicals; sanitizers; etc. shall be stored to prevent contamination of food and clean equipment; utensils and disposable items. CDI by properly storing chemicals. 7-204.11; Priority - (REPEAT) Quaternary ammonium (QA) sanitizer in one spray bottles labeled as "sanitizer" had QA concentration greater than 400 ppm (test strip turned blue). Sanitizers shall not exceed required concentration limits. Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

Nota del inspector (en inglés): 6-101.11/6-201.11; Core - (REPEAT) In both men's and women's bathroom; large absorbent carpeted mats were on floor in front of handsinks. Floors; walls and ceilings shall be designed; constructed; and installed so they are smooth and easily cleanable. Floors shall be non-absorbent in areas subject to moisture. Remove carpeted mats from bathroom floors and provide nonabsorbent non-slip mats if desired.
