Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Cleaned equipment and utensils shall be stored in a self draining position that allows air drying. Ensure these containers are completely dry before stacking together.

Nota del inspector (en inglés): 3-501.16(A)(2); Priority; 3-501.16 (A)(2) and (B); Priority; All TCS foods in the prep cooler on the makeline were holding above 41F (see the temperature chart). Ambient air of this prep cooler measured 44F-45F. Maintain TCS foods in cold holding at 41F or less. CDI- Ready-to-eat; TCS foods holding above 45F were voluntarily discarded; TCS foods holding 44F and below were allowed to cool down. Unit was adjusted to a lower setting and ambient air measured 38F-39F prior to leaving establishment. Knob to adjust temperature is easily accessed in the prep cooler and may have been bumped at some point. Use thermometer to check internal food temperatures throughout the day. Ensure these packages are cut open to introduce air prior to thawing or remove fish from packaging entirely. Nota del inspector (en inglés): 3-501.16(A)(2); Priority; A few TCS foods in the tall reach-in cooler in the server area were holding above 41F- milk gallon (44F) and individual cups of pico de gallo (44F). Other TCS foods in this prep cooler measured 41F. Ambient air of this unit measured 45F when verified. Maintain TCS foods in cold holding at 41F or less. CDI- All TCS foods were either relocated to alternate refrigeration or stored directly in an ice bath to maintain temperature.
