- Importante Problemas con el lavado de manos
El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Nota del inspector (en inglés): 5-205.11 Using a handwashing sink Operation and maintenance (A)A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf (B) A handwashing sink may not be used for purposes other than handwashing. Pf - Rear handsink was blocked by mop bucket and had a container with celery inside. Hand sink plumbing was also not in good repair. While EC was washing hands observed water draining on floor from striped pipe. REPEAT. VR required for plumbing on hand sink 6/12/2026. No active washing was taking place. Chlorine sanitizer used in three compartment sinks shall be between 50-200ppm. Nota del inspector (en inglés): 3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. Obsevred multiple wiping clothes stored throughout front service line that were wet and soiled not in sanitizing containers. Employee stated that the container for sanitizer was stored in rear in of establishment. A container needs to be located up front due to use of wet wiping clothes. CDI by placing container at front of establishment.

NonFOOD-CONTACT SURFACES shall be free of unnecessary ledges; projections; and crevices; and designed and constructed to allow easy cleaning and to facilitate maintenance. - Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.15; Priority Foundation; Foods to be cooled were in large; deep pans with plastic wrapped tightly on them. Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. Divide food into smaller; thinner portions. Keep food uncovered while cooling. CDI-Educational materials on cooling provided to PIC via email. Plastic was removed; food was divided; and moved to freezer for faster cooling. .

Nota del inspector (en inglés): 4-501.19; Priority Foundation; The wash solution in the 3-compartment sink measured only 86F when utensils were washed. Wash solution shall measure 110F or higher. CDI-Solution was remade to be 120F.
