Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; Cheese curds; ground beef and pulled BBQ were observed above 41°F. Some temperature abuse occurred during the trip from the commissary despite being in an insulated cooler. PIC states that all of these foods will be used within the four hour window of operation. Blanched fries in plastic tubs that had just come from the commissary will be kept on the counter until they are used up. These tubs are too large to be kept in the reach-in cooler. Spoke with the PIC about implementing time as a public health control. The cheese curds need to warm up so that they melt when hot gravy is poured on them. PIC states that most food is gone by the end of their four hour window of operation. Time as a public health control would be easy to implement in this case. Barbecue pork and ground beef were placed in the refrigerator until they are needed. Fries and cheese curds were placed on time as a public health control.
