- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): "3717-1-03.4(F)(1)(b) - Violation - TCS-cold holding TCS foods were being held at temperatures >41° F."
Nota del inspector (en inglés): "OBSERVATION: Observed sliced tomatoes holding at 48°F in table top refrigerator and lettuce holding at 50°F in reach in cooler for less than 4 hours per PIC. CORRECTIVE ACTION: TCS foods were moved from tabletop refrigerator which was noted at below 41°F by end of inspection. Discussed with PIC turning on refrigerator earlier and making sure food is fully cooled after preparing prior to placing in unit. TCS foods were moved from reach in cooler to another refrigerator maintaining proper temperature. PIC said a new refrigerator was on order. Reach in refrigerator is for non-TCS foods unless adjusted, repaired or replaced to maintain TCS foods below 41°F." - Hallazgo Problemas de origen, fechas o etiquetas de los alimentos
Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.
