OBSERVED TCS FOOD ITEMS (TOMATOES, LETTUCE) UTILIZING APPROVED TIME AS A PUBLIC HEALTH CONTROL AT THE FRONT SERVICE LINE NOT MARKED WITH TIME THAT IS FOUR HOURS PAST THE POINT IN TIME WHEN THE FOOD WAS REMOVED FROM TMEPERATURE CONTROL. INSTRUCTED TO DENATURE AND DISCARD LISTED TCS FOOD ITEMS AND MAINTAIN ALL FOOD ITEMS UTILIZING TIME AS A PUBLIC HEALTH CONTROL PROPERLY INDICATED USING APPROVED METHODS. APPROXIMATELY 10 LBS. OF FOOD VALUED AT $25.00 DISCARDED ON-SITE. PERSON-IN-CHARGE DISCARDED FOOD ITEMS AND PROVIDED LABELS FOR NEW FOOD ITEMS USING TIME AS A PUBLIC HEALTH CONTROL. PRIORITY FOUNDATION VIOLATION. 7-38-005 CITATION ISSUED.
