OBSERVED FOOD HANDLER WITH GLOVES ON WIPING THE SALAD PREP COOLER SURFACES AND THEN STARTED TO PREPARE SALAD FOR CUSTOMER. INSTRUCTED MANAGER ALL EMPLOYEES MUST PROPERLY WASH HANDS AFTER ANY POSSIBLE SOURCE OF CONTAMINATION. NOTIFIED MANAGER TO ASK EMPLOYEE TO WASH HANDS. PRIORITY VIOLATION 7-38-010, CITATION ISSUED.
