ALL SINKS IN WHICH FOOD, UTENSILS, AND EQUIPMENT ARE WASHED SHALL BE CONNECTED TO ALSO HAVE A CATCH-BASIN OR BE EQUIPPED WITH AN APPROVED GREASE INTERCEPTOR. INSTRUCTED PERSON IN CHARGE TO OBTAIN, INSTALL AND MAINTAIN AT ALL TIMES.
