Found TCS food held at improper temperature, Found 20 lbs of cooked eggs patties at 53.4f, 10 lbs of sausage patties at 58.3f, Instructed manager to hold TCS foods at 41f or lower. Priority violation 7-38-005. Food discarded valued at $70.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

OBSERVED VARIOUS MILKS AT IMPROPER TEMPERATURES DURING TIME OF INSPECTION LOCATED UNDER EXPRESSO MACHINE IN FRONT PREP AREA. NOTED APPROXIMALTEY 3 HALF QUARTS OF THE FOLLOWING OPENENED MILK (COFFEE MILK, ALMONS AND OAT) RANGING BETWEEN 52F-56F. ALL SAID MILK WAS VOLUNTARILY DISCARDED BY PERSON IN CHARGE INSTRUCTED TO HOLD ALL COLD TCS FOOD @ 41F OR BELOW AND MAINTAIN. PRIORITY VIOLATION. #7-38-005. CITATION ISSUED.
