PROPER COOLING METHODS USED; ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL
Improper cooling method. Found thick chili beans being cooled down in a large tub in walk-in cooler covered tightly. Instructed manager to use small and shallow containers, covered partially when cooling down hot TCS foods. Priority foundation violation 7-38-005.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
