OBSERVED TCS FOODS HELD AT INADEQUATE TEMPERATURES RANGING FROM 46-55 F. INSTRUCTED MANAGER TO ENSURE ALL COLD FOODS ARE HELD AT 41 F AND BELOW. MANAGER DISCARDED 13 POUNDS OF BEE,F 25 POUNDS OF CHEESE 1/4 TH GALLON OF MILK, AND 10 POUNDS LETTUCE ($200) PRIORITY VIOLATION 7-38-005 CITATION ISSUED.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
