INSECTS, RODENTS, & ANIMALS NOT PRESENT
OBSERVED EVIDENCE OF RODENT ACTIVITY ON THE PREMISES. OBSERVED APPROXIMATELY 50 DROPPINGS IN THE FOLLOWING AREAS: IN CULINARY CLASSROOM, ON TABLE BELOW WINDOW, UNDER DISHWASHER, UNDER THREE COMPARTMENT SINK, AND BEHIND HOT HOLDING RACKS, IN MAIN KITCHEN BEHIND GREASE TRAP, BEHIND PREP TABLE NEAR OFFICE, IN REAR DRY STORAGE ROOM UNDER RACKS, IN SERVING AREA ON BOTTOM RACK OF HOT HOLDING UNITS, AND IN CREVICE ON WALL DIRECTLY ADJACENT TO REAR STORAGE ROOM. MANAGEMENT INSTRUCTED TO CLEAN AND REMOVE ALL RODENT DROPPINGS FROM ALL AFFECTED AREAS. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO ELIMINATE THE PEST ACTIVITY. PRIORITY FOUNDATION #7-38-020(A). CITATION ISSUED.
The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.

ADEQUATE HANDWASHING SINKS PROPERLY SUPPLIED AND ACCESSIBLE
OBSERVED NO PAPER TOWELS AT THE HANDWASHING SINK ON THE SERVICE LINE. THE MANAGER PLACED A ROLL OF PAPER TOWELS. INDIVIDUAL TOWELS ARE REQUIRED, AND A DISPENSER MUST BE INSTALLED FOR INDIVIDUAL PAPER TOWELS TO BE DISPENSED. INSTALL AND MAINTAIN. PRIORITY FOUNDATION VIOLATION 7-38-030 (C)
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
