PROPER COLD HOLDING TEMPERATURES
Inspector’s notes
TCS food was held at an improper temperature; 3 lbs of sliced deli meat were found to be held at 57.4-60.0°F at the front service line. Instructed the manager to keep all cold TCS foods at 41°F or lower. Priority violation 7-38-005. Food discarded is valued at $15.
In plain English
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
