UTENSILS, EQUIPMENT & LINENS: PROPERLY STORED, DRIED, & HANDLED
OBSERVED CLEAN LINENS IN CONTAINER STORED DIRECTLY ON THE FLOOR IN THE BASEMENT AREA. INSTRUCTED TO RELOCATE CLEAN LINEN CONTAINER AND MAINTAIN CLEAN LINEN CONTAINERS AT LEAST 6 INCHES ABOVE THE FLOOR AND MAINTAIN.
Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.

OBSERVED NON-FUNCTIONAL COOKING EQUIPMENT IN 2ND FLOOR AREA OF FACILITY INCLUDING OVENS, DEEP FRYERS, AND COLD-HOLDING EQUIPMENT THAT IS NO LONGER IN-USE BY FACILITY. INSTRUCTED TO REMOVE ALL EQUIPMENT UNNECESSARY TO CURRENT OPERATIONS FROM PREMISES AND MAINTAIN PREMISES FREE FROM EQUIPMENT NOT IN-USE.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

OBSERVED SIGNAGE NOTIFYING FOOD EMPLOYEES TO WASH HANDS NOT PROVIDED AT THE BAR AREA HANDWASHING SINKS. INSTRUCTED TO PROVIDE ADEQUATE SIGNAGE TO ALL HANDWASHING SINKS AND MAINTAIN AT ALL TIMES.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
