TCS food not maintained at 5°C (41°F) or below. Several reach-in cold holding units improperly holding TCS foods. Cut tomatoes observed holding at 60 degrees F. Shredded cheese and lettuce observed holding at 67 degrees F. Raw fish observed holding at 56 degrees F. Cooked eggs holding at 52 degrees F. Raw chicken holding at 50 degrees F.
