Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
More about food kept at an unsafe temperatureManual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)
At the three compartment sink quats tested at 0ppm and in red sanitizer bucket quats tested at over 500ppm; it is unclear what is causing this but the person in charge emptied all the buckets and sink and refilled them and tested at 300ppm quats; sanitizer should be at ppm per manafacturer's instructions.
Cleaning products, pesticides, or other chemicals were stored or labeled in a way that could let them get into food. This is serious because chemical contamination can make people sick quickly.
More about chemicals stored or used unsafelySystem Maintained in Good Repair (C)
Per the person in charge and per observation there is a dedicated prep sink with an air gap but the staff do not use the prep sink due to water spilling onto the floor due to the pipes not being aligned and therefore the staff have been using bus buckets to wash produce for a number of years; have a licensed plumber repair or adjust the pipes to allow the staff to use the prep sink.
Floors, walls, ceilings, lighting, ventilation, or garbage areas needed repair or cleaning. These are usually less urgent than food-handling problems but still need to be fixed.
