Observed plastic containers inside the flip top unit. Recommend using stainless steal containers. Salsa- 67F and Guacamole 46F. Staff was able to separate the salsa into another container and refrigerate until it was 41F. Flip top does not have a hood/covering.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

As a precaution all open pastries and foods contained in open top refrigerators has been volunarily discarded by the on site person in charge that may have been affected by noxious smoke odors. PIC to contact trash company for an extra pickup to remove food waste. Upon arrival smoke odors has dissipated.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
