1 recorded violation

criticalCode MN Rule 4626.1610ABChemicals

Official wording

Use poisonous or toxic materials according to label directions and MN Statutes chapter 18B. Application must not constitute a hazard to people and contamination of food, equipment, utensils, linens and single-use and single-service articles must be prevented.

Inspector’s notes

Commercial Bleach sanitizer spray bottle used to sanitize food contact surfaces was measured over 200ppm at the time of inspection. Test strip was bleached out completely, indicating that the sanitizer was too strong. Discussed with employee that if sanitizer is too strong, it can leave a residue on surfaces and impart flavor onto foods. Employee diluted sanitizer until it reached 200ppm, which is safe level for chlorine sanitizer. Retrain employees to mix sanitizers within safe and effective range. Bleach sanitizers should be used according to the label or no more than 200ppm at all times.
